Sun-Dried Tomato Basil Pasta

Skip the spaghetti and meatballs for this new, healthy pasta alternative! I love this recipe because it takes less than 15-minutes to prepare and is the perfect date-night dish. This entree has a savory, mildly spicy flavor and can be eaten hot or cold. Bon Appétit!

​Ingredients-
  • 8 oz. package of gluten-free pasta
  • 7 oz. jar of sun-dried tomatoes in oil
  • 1-1 1/2 cups of fresh basil leaves
  • 1/2 cup spinach
  • 4-5 cloves of garlic chopped
  • 1 Tbsp nutritional yeast
  • 1 Tbsp red pepper flakes

Directions-
  1. Cook pasta according to package directions. Drain & Rinse.
  2. Add sun-dried tomatoes, basil, spinach. chopped garlic, nutritional yeast & red pepper flakes to a food processor and blend until smooth.
  3. Toss pasta with tomato mixture, serve & enjoy!
